For jam in pieces, you need to select healthy strong apricots, maybe even slightly unripe. Inspect all of them for bird damage or rot. Cut the fruit in half and remove the seeds, weigh the required amount of apricots without the seeds. Particularly large halves should be cut into medium-sized pieces.
Pour sugar and apricots with water, put on medium heat. When the jam starts to boil, reduce heat and let the mixture simmer for 5 minutes. During this time, you do not need to interfere with it, just shake the pan a little. Allow the mixture to cool, then repeat the heating and cooling procedure 2 more times. At this time, wash the cans with lids with soda, rinse and sterilize.
