Jam from apricots with walnuts

Thick and aromatic jam or apricot confiture is easier to prepare than jam. It does not need to be boiled and cooled several times, and the thickness can be made to your liking by increasing the cooking time. Any apricots are suitable, because overripe ones boil well, and less ripe ones can be crushed before or after cooking, only there should be no rotten specimens and the stone should be easily separated. We are preparing this dessert with walnuts, so we leave the apricots in halves.

Measure out the right amount of ingredients for making jam, as in the recipe they are given for 0.5 l of dessert. Rinse and pat dry the apricots. Dry the peeled walnuts in a skillet or oven until crisp.

Then remove the seeds from the apricots, cut the fruits into pieces and transfer to a bowl for making jam.

Pour the calculated amount of sugar to the apricots and add citric acid to reduce the sugary sweetness and preserve the bright color.

Bring apricots with sugar over low heat to a boil and simmer for 5 minutes. Remove the foam from the surface. Optionally, you can grind the apricots with a hand blender.

Then add walnuts to the jam. You can grind them into small pieces. Turn off the fire and let the jam steep for 40 minutes in a cool place to soak the nuts in the sugar syrup.

After this time, cook the jam over medium heat for 30-60 minutes until the desired consistency, periodically stirring it with a wooden spoon. When boiling, some of the liquid will evaporate, which will also make the jam thicker.

When the jam reaches the density you need, put it in dry sterile jars and immediately seal it tightly. Jam from apricots with walnuts is ready. It keeps well at home temperature.
