This recipe for making an unusually tasty and aromatic jam is intended only for Antonovka apples, and precisely because these apples contain a lot of natural pectin, and Antonovka has a unique aroma. When cooled, this jam becomes similar to marmalade due to the fact that water is added to it during cooking, because without water, you get a simple jam. Jam is prepared quickly and easily.

Rinse Antonovka thoroughly under running water and wipe the apples dry with a napkin.

Core and peel the apples with any tool, although the peels can be left on. Weigh the peeled apples, because according to the recipe you need to take 1 kg of them.

Then grind the apples on a coarse grater or using a food processor with a special attachment. Transfer the crushed apples to a saucepan for making jam.

Then pour 2 cups of water to the apples, add the calculated amount of sugar and add citric acid so that their color remains light.

Bring to a boil over medium heat. Remove the foam from the surface. Cook the jam over low heat for 1 hour and stirring occasionally with a wooden spatula or spoon.

The boiled jam will acquire a beautiful amber hue, but in consistency, when hot, it will not yet be so thick. Check its readiness by dropping a little jam on a saucer, the drop should not spread.

Pour the prepared Antonovka jam into dry sterile jars and seal it tightly. After cooling, store the jam in a cool, dark place.
