Sweet cherry is one of the favorite delicacies of most sweet tooth. To preserve this fragrant berry for the winter and treat yourself to a delicious dessert, I suggest boiling jam with a thick, pleasant consistency. The jam is prepared quickly, since the bones do not need to be removed and this significantly saves cooking time.

Sort the cherries, put in a sieve, rinse thoroughly and let the excess liquid drain.

Put the granulated sugar in a metal dish with a thick bottom. Save two tablespoons of sugar, it will come in handy later. Pour the required amount of drinking water into the dishes. Place on medium heat.

Bring the syrup to a boil and then reduce the heat. Stir constantly and cook for about 5 minutes.

Then add the cherries. Bring to a boil, stirring occasionally and skimming off any foam.

Simmer the jam for 5 minutes. Then remove from heat and leave to cool completely for 10-12 hours.

Combine the remaining granulated sugar with pectin and stir. After 12 hours, put the jam over low heat, bring to a boil, stirring occasionally and removing the resulting foam, add lemon juice and a mixture of granulated sugar and pectin. Stir and simmer the jam for 5 minutes.

Then remove from heat and leave to cool completely for a couple of hours.

Wash and sterilize the jars thoroughly in the microwave or oven. Pour boiling water over the lids. Jars and lids must be completely dry. Spoon the cherry jam into sterile jars with a large spoon. Tighten jars of jam with sterile lids, then move them to a cool place for long-term storage.
