Blackcurrant jam with agar agar

Agar agar is a good gelatin substitute made from algae. If you do not want to use gelatin, then feel free to replace it. It makes a good, thick jam. Perfect for baked goods and delicious sandwiches.

We sort out the currants, removing all the leaves and twigs. Mine and let dry slightly.

Now pour the currants in portions into a deep bowl and chop it with a crush. Add sugar and agar-agar, stir and let it brew and swell.

Place the pot on the stove and bring the mixture to a boil. Then we continue to cook the jam for another 5 minutes.

Pour hot jam into sterilized jars and roll up. Turn them over onto lids and wrap them with a warm blanket or towel. Let cool for 1.5 hours. We put the jam in the refrigerator.
