Blackberry jam with pectin

Thick and soft jam with pieces of black berries will remind you of warm summer days. Liquid pectin will provide a gelling effect when cooked and will reduce the amount of sugar needed. We also add lemon juice to the jam for a pleasant aroma and taste. This jam should be served in a dessert vase or saucer, and it can also be added as a filling to baked goods.

Sort out the debris from the blackberries and remove the leaves and stalks. Transfer the berries to a colander and rinse well under running water. Leave the blackberries for 5 minutes to drain the water.

Grind the berries in a puree through a meat grinder or blender. Wash the lemons in hot water, roll a little on the table with your hands for better juice separation and cut into 2 parts. Squeeze the juice out of them. You should get 1 glass. Try the berry and if it is sour, cut the juice portion by half.

Add juice to berry puree and stir.

Pour sugar into a saucepan with berries and leave without stirring for 30 minutes. After - stir.

Put the jam on high heat and boil the mass, cook for 1 minute, stirring occasionally. Remove foam with a slotted spoon.

Remove the jam from the stove and add the pectin. Stir well, cover and let stand for 7 minutes.

Place a watering can on the prepared sterile jars and pour the jam. Cover the container with lids.

Place a wide pot of water on the stove and place the jars in it, covering the bottom with a thin towel. The water should be 2 fingers below the neck. Boil the jars for 10 minutes with a slight boil. Remove the jars carefully and tighten the lids tightly.

Turn the container upside down, cover with a blanket and leave to cool slowly for a day, avoiding drafts and temperature changes.
