Blackberries are a tasty and healthy berry, from which you can prepare various preparations for the winter: jam, jelly, compote, or simply freeze the whole berries. Today we will make a delicious blackberry jam using gelatin, which will give the jam a thick consistency.

We sort out the blackberries from the leaves and twigs, rinse in a colander under a cool stream of water and leave for 10-15 minutes to drain the water. Then, using an immersion blender, grind the blackberries with half the amount of sugar in the mashed potatoes and transfer the chopped mass to a saucepan. Put the saucepan over low heat and bring the mixture to a boil. We boil the berries for 20-30 minutes.

After the berries have boiled, remove them from the heat, put cheesecloth folded in 2-3 layers in a clean container and put the berry puree into it. Gently collect the edges of the gauze and squeeze the juice. After that, add the remaining sugar to a saucepan with blackberry juice, mix well and put on fire. After the mass boils, remove the resulting foam with a wooden spoon. Add gelatin to the jam, mix well so that it is evenly distributed throughout the mass, and boil for 10-15 minutes.

At this time, we rinse and sterilize glass jars over steam, boil the lids. We put the ready-made thick jam hot in the jars, tighten the lids and turn the jars upside down. We leave the jars with jam at room temperature until it cools completely. After that, we put the jars in a cool dark place for storage.
