Here is a recipe for pitted red currant jam - a very bright and tasty treat. The dessert has a pleasant sourness and is obtained without sugary sweetness - this is achieved due to the correct ratio of berries and granulated sugar. This jam can surprise loved ones and guests with its delicate and harmonious taste.

Red currants must be sorted out, branches and leaves, as well as all spoiled berries, must be removed. After that, rinse the currants under running water.

We transfer the peeled and washed berries to a container in which the jam will be prepared. Boil the berries over medium heat, but do not bring to a boil. As soon as the berries become soft and hot, remove the container from the heat and knead the currants with the help of a crush.

After that, the resulting berry mass must be rubbed through a sieve, it is more convenient to do this in small portions.

Transfer the bones remaining after rubbing into cheesecloth and squeeze. Pour the squeezed juice into the rest of the berry mass.

Pour half of the required amount of granulated sugar into a container with red currant juice. Stir and cook over high heat until boiling.
