Red currant jam, even when boiled for 5 minutes, turns out to be quite thick, due to the content of a large amount of pectin in this berry. The principle of making jam is simple: first, the currants are brought to a boil, then grind through a sieve and then cook for 5 minutes. It is important not to digest the jam, otherwise the pectin will collapse and the workpiece will be liquid. Sugar for jam is taken in a standard proportion - 1: 1.

Carefully prepare the red currants for the jam. Peel it of twigs and tails and then rinse it several times in cold water. Dry the clean berries on a kitchen towel and put them in a saucepan for making jam.

Then add the calculated amount of sugar to the currants and bring the berry mass to a boil over low heat, stirring it actively with a spoon so that some of the berries are crushed. When the jam boils, quickly remove the foam and turn off the heat.

Gently rub this hot mass through a sieve so as not to burn yourself to remove bones and peel as much as possible. Pour the resulting currant puree into the same saucepan and bring to a boil over low heat. Remove the foam from the surface again and cook the jam for 5 minutes, no more, from the beginning of the boil.

For this blank, sterilize small jars in a hot dry way beforehand. Boil the lids. Pack hot jam in jars and immediately seal hermetically. Then cover the jars overnight with a terry towel.
