Red currant berries do not have a sweet taste, but they contain many useful substances. Also, thanks to the pectin contained in the currants, currants have the valuable property of self-gelation. Therefore, to obtain a thick red currant jam, the addition of additional gelling components and also long boiling is not required.

Rinse the currant berries thoroughly. We throw away defective fruits and accidental waste. We pick the berries from the branches. Let the prepared berries dry a little by placing them in a colander or sprinkling them on a clean towel in one layer.

Pour granulated sugar into the container in which we will cook the jam and pour the specified amount of water. Stir the sugar mass and place the container on the stove. At a low temperature with constant stirring, bring the mass to a boil: the sugar should completely dissolve and form a syrup.

Dip the red currant berries into the resulting boiling syrup, mix and bring to a boil. From the moment of boiling, cook the jam for five minutes and remove from the stove. Let the mass cool completely and put it back on the stove. Bring to a boil, cook for five minutes and remove from the stove again and cool the jam. We repeat the procedure one more time and remove the jam from the stove for further packing.

Pour hot jam into dry sterilized jars and close with dry sterile lids. Let the jars of jam cool completely and put them in a dark and cool place for storage. After a few days, the jam will noticeably thicken and take on a characteristic consistency.
