To make thick jam from raspberries and red currants, it is important to know one secret: currant berries must be grated through a sieve not at the very beginning, but during the cooking process, because pectin is found in the pulp of the berries. There is enough pectin in red currants, so the jam will harden well with the addition of raspberries.

If the red currant was picked with twigs, then there is no need to cut them off. When the berry mass is grinded through a sieve, all excess will remain in it. To prepare the red currant berries for making jam, it is enough to rinse them thoroughly with running water, preferably several times. Throw the berries in a colander so that all the liquid is glass.
The resulting berry mass will turn out to be thick, but so far it will not gel. Pour jam into prepared jars as soon as the berries have been rubbed through a sieve. We close the blank with lids and leave it for a day at room temperature - the jam should cool completely. Finally, the red currant and raspberry jam will become thick during storage.
