Raspberry and red currant jam

To make thick jam from raspberries and red currants, it is important to know one secret: currant berries must be grated through a sieve not at the very beginning, but during the cooking process, because pectin is found in the pulp of the berries. There is enough pectin in red currants, so the jam will harden well with the addition of raspberries.

Cooking process

step 1 out of 6
If the red currant was picked with twigs, then there is no need to cut them off. When the berry mass is grinded through a sieve, all excess will remain in it. To prepare the red currant berries for making jam, it is enough to rinse them thoroughly with running water, preferably several times. Throw the berries in a colander so that all the liquid is glass.
step 2 out of 6
Just sort out the raspberries, you don't need to rinse them. If you get dirty berries, then rinse them or set them aside.
step 3 out of 6
Combine red currants and raspberries in a suitable container, fill the berries with granulated sugar. With a spoon, you need to slightly crush the berries so that there is more juice. Mix and leave the currants and raspberries in this form for 60 minutes.
step 4 out of 6
The present berries will become fragrant and viscous. We put the container with berries on the fire, stir constantly. Boil for 7 minutes after boiling. During the cooking process, foam will form, we remove it with a slotted spoon or other convenient device.
step 5 out of 6
The next step is to pass the berry mass through a sieve. To do this, put a sieve on the pan, put the berries in it in portions and wipe it with a regular spoon.
step 6 out of 6
The resulting berry mass will turn out to be thick, but so far it will not gel. Pour jam into prepared jars as soon as the berries have been rubbed through a sieve. We close the blank with lids and leave it for a day at room temperature - the jam should cool completely. Finally, the red currant and raspberry jam will become thick during storage. This jam is perfectly stored both in a cool place and at room temperature. Delicious and aromatic jam is ready! Open a jar of ready-made jam and enjoy its taste, remembering summer days!

Enjoy your tea!
