Raspberry jam with gelatin

Raspberry jam with gelatin is a sweet berry mass that will appeal to both adults and children. Gelatin thickens the consistency of the jam, making the aromatic raspberry jam suitable both for tea drinking and for use as a filling in pies and various desserts, and purée of berries makes the texture of raspberry jam more tender and airy.

We sort out ripe raspberries from the twigs, put them in a colander and rinse them under a cool stream of water. Leave it for 5-10 minutes to drain the water and transfer the raspberries to a saucepan with a thick bottom.

We fill the raspberries with sugar and leave for 3-4 hours so that the raspberries let the juice out and the sugar dissolves.

Then, using an immersion blender, puree the berries.

Put the saucepan with raspberry puree on low heat, bring to a boil, not forgetting to constantly stir the jam with a wooden spoon. After the jam has boiled, remove the resulting foam from it, reduce the heat to minimum and leave the jam to cook for 15-20 minutes.

Pour gelatin into a small container, dilute it with a small amount of cooled raspberry puree, mix well and send it to a saucepan with jam. Mix everything well so that the gelatin is distributed throughout the mass. Boil the jam for 2-3 minutes and remove from heat.

Pour hot jam into sterilized jars, tighten with boiled lids and turn the jars upside down. We leave them until they cool completely, after which we put them in a dark place for storage.
