Prepare all the ingredients you need to make the jam. Sort the mulberry carefully and get rid of the tails.

Place the prepared berries in a thick-bottomed container. Add a cinnamon stick and a few star anise stars, or vanilla if desired.

Prepare the jars and wash them thoroughly and sterilize them in the microwave or oven. Pour boiling water over the lids. Jars and lids must be completely dry.
