Sugar-free plum jam

Making sugar-free plum jam is very simple, because we make it with only one ingredient. When making jam, the plum will completely boil down, and this dessert will have a thick and jelly consistency. It is better to make sugar-free jam from sweet varieties of plums. Overripe and damaged fruits are suitable for him. We cook by the method of 2-fold cooking with a break of one day.

Sort the plums for cooking, removing the stalks and all debris. If there are unripe fruits, then leave them for 1-2 days to fully ripen. Then dry the plums with a towel and remove the seeds.

Transfer the prepared plums to a jam pot and add a glass of water. Put the saucepan over medium heat and, stirring slightly, bring to a boil.

Then simmer the plums on low heat for 3-4 hours, removing the foam and stirring occasionally.

After this time, turn off the heat and leave the plums until the next day, covering the pan with a towel. During this time, the jam will become thicker.
The next day, chop the plums with an immersion blender and cook for another 3-4 hours on the lowest heat so that the mass is boiled down and halved in volume. By the end of cooking, the jam will have a dark color and thick texture.
