I bring to your attention a wonderful and simple recipe for fragrant yellow cherry jam. The thick consistency of the jam allows it to become a layer in cakes or other desserts. The delicacy turns out to be moderately sweet and goes well with any baked goods.

Sort out the white cherries, put in a sieve, rinse thoroughly and let the excess liquid drain. Using a special tool or a pin, remove the seeds, put the berries in a container with a thick bottom. In another container, boil the syrup by combining granulated sugar and drinking water (save 2 tablespoons of sugar for later). Bring the syrup to a boil and pour over the berries.

Place the container with cherries over medium heat and bring to a boil, boil the berries for 5 minutes, then remove from heat and cool completely. This will take 1-1.5 hours.

Mix the jellix with two tablespoons of the retained granulated sugar, add to the cooled berries, mix well and put on low heat. Bring to a boil.
