Jam from yellow plum for the winter

Plums are a versatile product that can be used to make jam, jelly, compote and even a spicy sauce for meat. Today we will be preparing a delicate in consistency and very aromatic jam for the winter. The hardest part of the preparation is to peel and seed the plums. Next, fill the plums with sugar and puree, add vanilla and citric acid. Jam is heat treated for no more than 15 minutes, so plums retain their beneficial properties and vitamins.

For the jam, we select ripe yellow plums. The number of plums in the recipe is indicated already in pure form after peeling and pitting. We wash them in warm running water and put them on a kitchen towel so that they dry a little from the water.

To peel the plums, fill them with boiling water and leave for 3-5 minutes, after which we drain the boiling water and fill the plums with ice water. After this procedure, we clean the plums from the peel. Cut in half and remove the bones.

Place the plums in a container and cover with sugar.

After the plums have been juiced, use a blender to grind them in mashed potatoes, add vanillin and citric acid. Stir and put on medium heat. Bring the jam to a boil.

Boil the jam for 3-5 minutes, remove the resulting foam and reduce the heat. Boil the jam to a thick consistency for 10-15 minutes and remove from heat.

We wash the jars for jam with baking soda, rinse thoroughly with running water and sterilize over steam for 5-7 minutes. Then we spread the hot jam on sterilized jars, tightly cork with boiled lids and turn them upside down. Leave it to cool completely at room temperature, after which we store it in a cool, dark place. We left the mute jam for tasting with a cup of aromatic tea.
