Usually "hedgehogs" from minced meat with rice are stewed in sauce or gravy - this is how the "needles" from rice stand out more noticeably, and the meatballs themselves are juicy. However, you can break the usual way and cook "hedgehogs" without stewing. In this case, the meatballs will be covered with a golden brown crust, which will not get wet from the sauce and will be slightly crispy. And to make the rice on the surface more pronounced, it is worth using long-grain varieties. For example, basmati.

Rinse the rice thoroughly and place in a small saucepan. Fill the cereals with water, add some salt and boil until half cooked for seven minutes. Then we put the rice in a colander, rinse with cold water and let it dry slightly. Place the minced meat for the "hedgehogs" in a bowl. Add the bread and milk mass and prepared rice. Peel the garlic, rinse it and pass it through a press. Put the resulting garlic mass to the minced meat, add salt and black pepper to taste. We mix all the components with our hands until they are relatively homogeneous. It is recommended to beat off the mass on the bottom of the bowl so that the consistency becomes more cohesive, dense, viscous. Three or four minutes of beating will be enough. After such manipulation, the meatballs will keep their shape well and will not fall apart during subsequent cooking.
Pour vegetable oil into the pan in such an amount that it covers the bottom with a layer of three to four millimeters. We warm it up to a hot state. Put meatballs in oil and fry them without a lid on all sides, keeping the temperature of the stove medium-low. Remove the finished hedgehogs from the pan and put them on a dish. Serve hot with any vegetable side dish.
