Minced hedgehogs with rice in the oven with gravy

The meatballs owe such an interesting name to rice, the grains of which, after cooking, appear on the surface and imitate the needles of a hedgehog. To get this effect, rice is added to the minced meat in its raw form. During baking in the oven with gravy, the cereal swells, increases in volume and part of it in finished form goes beyond the meatballs. Parboiled rice is best avoided as it is quite hard and will take longer to cook than minced meat. Best of all "hedgehogs" are obtained with long-grain rice.

It is better to use minced meat for meatballs mixed: pork plus beef in equal proportions. The texture of the minced meat should be fine-grained - so the rice harmoniously "builds in" into the meat mass, and the finished dish has time to cook until tender. We place the minced meat in a volumetric bowl, break the eggs to it. Pour the rice into a colander and rinse thoroughly in running water until it becomes transparent. Let the washed cereal dry slightly so as not to add excess moisture to the minced meat, and pour it into a common bowl.

Salt minced meat to taste and add black pepper. Mix the ingredients thoroughly with your hands or with a spoon until you get a relatively homogeneous mass. We set aside the cooked minced meat.

Peel the onions, rinse and cut into thin feathers along the length of the onion.

Peel the carrots from the top skin, wash and rub on a coarse grater. The next step is to place the vegetables in a baking dish. Before that, onions with carrots can be fried until soft in a pan, or you can leave them raw and bake in this form with the "hedgehogs". In the first case, the gravy will turn out to be more homogeneous, since the vegetables are cooked until they are completely softened. In the second case, the onions and carrots will remain decorated and the gravy will be more textured.

We make the preparation for the gravy in a separate bowl: mix the sour cream, tomato paste, salt and black pepper to taste. Pour in water in the specified amount and mix.

Put half of the total amount of chopped onions and grated carrots in a baking dish greased with vegetable oil. Pour with sour cream mixture.

We form round meatballs from the prepared minced meat, rolling each ball well between the palms. We put the future "hedgehogs" on top of vegetables with sauce.

Place the remaining carrots and onions on the meatballs in an even layer. Pour the second part of the sour cream mixture on top. We close the form with a lid. If not, you can cover the form with foil (shiny side inward) and squeeze the edges well.We put the form in an oven preheated to 190 degrees on the middle-lower level. We bake the dish for fifty minutes.

After the specified time has elapsed, we take out the form, open the lid and evenly sprinkle the dish with cheese grated on a coarse grater. We return the "hedgehogs" to the oven and bake without a lid for another five minutes, until the cheese is completely melted.

We take out the finished meatballs from the oven and immediately serve them to the table. Boiled potatoes and any greens are well suited as a side dish.
