Minced "hedgehogs" are a very practical dish. They allow a modest amount of meat to feed the whole family. You can not only get enough of such a dish, but also really enjoy: the real homemade taste of tender meatballs will not leave anyone indifferent. Add the sour cream sauce, in which we will stew the "hedgehogs", with chopped vegetables. This will add special richness and juiciness to the finished dish. For convenience, it is better to cook meatballs in a saucepan or in a frying pan with high sides - so neither the hedgehogs nor the sauce will end up on the stove in case of careless movement.

Place the rice in a colander and rinse thoroughly. Boil it in salted water for ten minutes. Then we put the cereals on a sieve and rinse again. Cool the rice that is half-cooked in this way, then mix it with the minced meat for the "hedgehogs".

Peel the onions. Cut one onion into small cubes. The second will come in handy later when making the sauce. Put the minced meat, prepared rice, chopped onions, chicken egg, salt and black pepper to taste in a bowl. Using hands or a spoon, mix the minced meat with additives, achieving an even distribution of all components over the total mass.

From the prepared minced meat, we form balls with an approximate diameter of five centimeters. To prevent the mass from sticking to your hands, you can moisten them in cold water. It is important to roll the minced meat portions well between your palms, to compact the balls - this way they will not fall apart when stewing and will retain their shape well.

Peel the carrots from the top skin, rinse and rub on a coarse grater. Peel the garlic and chop it finely with a knife or pass it through a press. Cut the remaining second onion into small pieces. In a saucepan in which we will stew the meatballs, we heat the vegetable oil in such an amount that it covers the bottom with a layer of two to three millimeters. Put grated carrots, chopped onions and garlic in hot oil. With constant stirring, fry the vegetables until soft. When the vegetable mixture in the pan becomes soft and starts to brown a little, put the prepared meatballs on top.

Cooking sour cream sauce. To do this, in a separate bowl, mix sour cream, dried dill, a little salt, black and red types of ground pepper to taste. Then add water in the specified amount and mix again - the sauce is ready.

Pour meatballs with fried vegetables evenly with the prepared sour cream mixture. Close the pan with a lid and bring the contents to a boil. From this moment, we reduce the temperature of the stove to a minimum and simmer the dish at a slow boil for twenty minutes.We remove the finished hedgehogs from the stove and let them brew under the lid for ten to fifteen minutes. Then serve with any side dish.
