Minced hedgehogs with rice in tomato-sour cream sauce

Juicy meatballs with rice in an appetizing sauce are great for a warm family dinner. Children will especially like rice “needles”, and tender and juicy texture of meatballs will not leave adults indifferent. We recommend using the long grain varieties to make the rice on the surface more pronounced. Mashed potatoes are well suited as a side dish - it perfectly emphasizes the juiciness of the sauce and the rich taste of meatballs.

Rice must be half cooked before mixing with minced meat. To do this, rinse it thoroughly and boil it in salted water for ten minutes. After boiling, fold the cereal onto a sieve and rinse it under a stream of cold running water. Let the moisture drain.

Minced meat can be bought ready-made or made at home. It is important to use a grinder grid with small holes so that the meat mass has a fine structure.

Cut the white bread into small pieces and fill it with warmed milk. When the milk is absorbed, knead the bread with a fork or punch it with an immersion blender. Put the minced meat in a bowl, add the bread mass, prepared rice, salt and black pepper to taste to it. Mix the ingredients with your hands or with a spoon. The resulting mass should be thick and keep its shape well. For more viscosity, you can additionally beat off the minced meat by throwing it in a lump on the bottom of the bowl.

We wet our hands in cold water and form meatballs with a diameter of four to five centimeters. We roll the balls well between the palms, making their surface smooth and dense. We put the future "hedgehogs" in a baking dish.

To prepare the sauce, mix the tomato sauce and sour cream in a separate bowl. Salt and add black pepper to taste. If the mixture seems too thick, you can dilute it with a couple tablespoons of water. Pour the meatballs in a mold with the prepared sauce, trying to cover them evenly.

Preheat the oven to a temperature of 190 degrees and put the dish on the middle level. We bake the dish for forty to forty-five minutes, until a dense golden brown crust forms on the surface. We take out the finished “hedgehogs” from the oven, let them cool down a bit and serve with a side dish.
