Stuffed zucchini in the oven with rings

I would like to recommend an interesting way of cooking stuffed zucchini. Zucchini peeled from seeds are stuffed with minced meat and then baked in the oven. Zucchini appetizer turns out to be hearty and tasty with a pleasant cheese crust.

Peel the onions and chop finely. Preheat the pan well. Pour in a small amount of vegetable oil and add the chopped onion. Saute for a few minutes over medium heat.

Wash and peel the carrots with a vegetable peeler. Using a coarse grater, grate the peeled carrots. Add to the fried onions and mix thoroughly, cook for a few more minutes.

Put the minced meat in a deep bowl and add the fried vegetables, salt and add black pepper to taste, and mix well.

Wash the zucchini thoroughly and let dry. Trim the ends and peel the skin with a vegetable peeler. Cut the peeled zucchini into thick slices. Use a tablespoon to remove the core.

Cover the baking sheet with parchment paper, lay out the prepared zucchini.

Stuff the zucchini with minced meat.

Wash the tomatoes thoroughly. Cut into thin rings. Place on top of the stuffed zucchini.

Grate hard cheese on a coarse grater. Sprinkle the zucchini with grated cheese. Turn on the oven to warm up. Bake the zucchini at 180 degrees for 45 minutes. Transfer the baked zucchini to a dish, garnish with finely chopped herbs.
