Stuffed squid on the grill

Stuffed squid can be cooked not only on the stove, but also on the grill. They are quickly baked, remain tender and are covered with an appetizing golden brown crust. We will use shrimp, cheese and herbs as a filling - it is very aromatic, juicy and tasty.

We clean the shrimp from the shell and tails. Heat butter and olive oil together in a frying pan. Put prepared shrimps in a hot mixture of oils.

Sprinkle the shrimp with salt and red pepper, stir and fry for one and a half to two minutes, stirring occasionally.

Immediately after the end of frying, remove the shrimps from the pan and place them in a separate bowl.

We wash the squids with water, clean the surface, remove the internal cartilage. Remove the transparent film from the inside and outside from the pulp. We leave the carcasses intact. Place the squid in a bowl, add salt, dried garlic and paprika to them. Mix well with your hands and leave to marinate for fifteen to twenty minutes.

Cooking squid filling. Wash the cilantro, dry it and finely chop it with a knife. Grate the cheese. Cut the fried shrimp into small pieces. Mix the grated cheese, chopped shrimp, chopped cilantro. The filling is ready.

Fill the squid carcasses with the prepared filling and stab with skewers.

We prepare a grill with embers. We do not allow open flames. We send stuffed squid to the grill. Cooking the squid for five to seven minutes in total. Do not forget to turn over. A golden crust should be browned on the surface.
