Korean Stuffed Cucumbers

A very quick savory cucumber appetizer that goes well with various dishes. Original Korean-style stuffed cucumbers will decorate any festive table and bring variety to your diet.

Wash the cucumbers thoroughly under running water, pat dry with paper towels. Cut each cucumber into four parts, not reaching the end. Rub the inside well with salt, leave the cucumbers aside.

Chop the green onion coarsely and mash it with your hands to let the juice flow.
Wash the dill and parsley and chop finely with a knife, mix the greens with the onions.
Chop the onion and garlic with a knife and add to the herbs.

Grate the carrots on a Korean grater, transfer it to the herbs, add paprika, soy sauce, sesame seeds, a teaspoon of Korean carrot seasoning, mix everything.
