To marinate fillets before baking, choose a marinade to your liking, and this is possible by trying different types. This recipe asks you to make a fillet marinade with onions, starch and spices. It is the starch, caramelizing at a high temperature, that will make the turkey fillet juicy and very tasty.

First, prepare all the products indicated in the recipe for barbecue. Give preference to chilled fillets, as even freezing once will dry the turkey when frying.

We wash the turkey well with cold water, dry it with a towel and separate the meat from the bone. Then cut the meat into even pieces up to 5 centimeters in size.

We peel the onions and cut them into thin rings.

Put the sliced ​​fillet in a deep dish, put onion rings to it and pour the calculated amount of potato starch. Add salt and spices to your liking. We don't add a lot of spices to the turkey, because the meat is tasty in itself and does not need flavor enhancers. You can add a little thyme, paprika, basil and a mixture of peppers.

Then hand the pieces of fillet with onions, spices and starch, mix well.

Cover the dishes with meat with a lid and leave for 3–6 hours to marinate. You can put the meat in a vacuum bag, then it will marinate sooner.
