Vegetable funchose is a great combination of fresh vegetables, Korean bean noodles, savory sauce and sesame seeds. Such an interesting and tasty salad, by the way, is perfect during the fasting period, because it contains only plant-based products. Thanks to the wide variety of vegetables, funchose turns out to be colorful and juicy, contains a large amount of vitamins, and the original sauce complements the dish with bright notes of lime combined with honey and sesame oil.

Put the funchoza in a deep container and fill it with boiling water. We leave for 10 minutes. Then we put it back on a sieve and rinse with cold water, leave for 3-5 minutes to let the water glass.

Let's start making the sauce: rinse the lime, remove the zest from it and squeeze the juice. Peel the garlic and pass it through a press. In a bowl, combine lime juice, sesame oil, honey and soy sauce, add garlic and lime zest, vegetable oil. Mix everything well, rub the garlic and zest a little, let the sauce brew for 5-10 minutes, while we prepare the vegetables.

We wash the cucumber, peel the skin and cut it into thin strips. Peel the carrots, rinse and cut into thin small strips, like Korean carrots. We wash the celery and chop it into thin rings. We wash the bell peppers, remove the seeds and cut into thin strips. We wash the chili peppers, remove the seeds and cut into thin half rings. Peel the onion, rinse and cut into thin half rings. Cut the funchoza into small pieces using kitchen scissors so that it is convenient to grab it together with vegetables, put it in a salad bowl, add vegetables. Season with sauce and mix well. Sprinkle funchose with sesame seeds and chopped parsley. The vegetable funchose is ready, bon appetit!
