Funchoza with mushrooms

Funchoza are glass vegetable noodles that make great dishes. Today we will cook funchose with vegetables - this is a wonderful combination of noodles, fresh vegetables and fried aromatic mushrooms with a spicy sauce. This option for cooking funchose, by the way, will be necessary during the fasting period, because the dish consists entirely of products of plant origin.

Finely chop the cabbage and rub it with your hands with a pinch of salt so that it is soft and let some juice flow. We clean the carrots, rinse and grate.

Peel the onion, rinse and cut into half rings. We spread it in a preheated pan with vegetable oil and fry until transparent. We clean the champignons, rinse and cut into small pieces. Add the mushrooms to the onion pan and fry until golden brown.

Put the noodles in a deep plate and pour boiling water over. Leave it for 10 minutes, then put the funchose in a colander.

Cooking the sauce: in a bowl, mix the soy sauce, vegetable oil and mustard. Add lemon juice, garlic and spices passed through a press. Mix everything well and let the sauce brew for 5-10 minutes.

Put the noodles in a salad bowl (you must first cut it a little with kitchen scissors into small pieces), add cabbage and carrots, mushrooms and onions and season the salad with sauce. Mix all ingredients well.
