Gazpacho with green tomatoes and melon

The classic gazpacho is made with red ingredients. But you can find recipes for yellow and green gazpacho. Today I propose to experiment and make a fragrant gazpacho with green tomatoes and melons.

Dry white bread in the oven or in a frying pan until it becomes a crouton.

Peel the garlic and chop with a knife.

Sprinkle dried bread with chopped garlic. Top with olive oil and dry white wine. Sprinkle with salt to taste.

Peel the onions and cut into several pieces.

Peel the melon from the skin and seeds, cut into several pieces.

Wash green tomatoes, cut into slices, removing the stalk.

Place melon, onions and green tomatoes in a blender bowl. Grind until smooth, add salt and whisk again with a blender. Place the finished gazpacho in the refrigerator to cool for about an hour.

Place a slice of garlic bread soaked in olive oil and dry white wine in a deep bowl and top with chilled green tomato and melon gazpacho. The cold soup has a delicate, airy texture, and the ingredients combine wonderfully.
