Gazpacho in Andalusian

Gazpacho is a fairly popular dish. Red gazpacho is prepared in western Andalusia, hence its name. This is a refreshing and light soup that is easy to make at home. And its taste will be no worse than that prepared in some restaurant. Do you like culinary experiments? Then this recipe is for you!

Place slices of white bread in boiled water. This will soften them.

Rinse the tomatoes, cut into 4 pieces, cut the stalk and transfer the resulting pieces to the blender bowl. Finely chop half of one tomato and set aside - later this will be used to decorate the soup.

Turn on the blender and chop the tomatoes into a smooth puree.

Cut the washed green peppers into small pieces. Cut one piece into small cubes (to decorate the soup). Place the rest of the pepper in a blender bowl.

Rinse fresh cucumbers, remove the skin. Cut each fruit into small pieces. A small piece must also be cut into small cubes (to decorate the finished dish). Place the rest of the cucumbers in the blender bowl.

We do the same with onions - finely chop a small piece and put it aside, cut the remaining onion into small pieces and send it to a blender to the rest of the ingredients.

We activate the blender and grind all the components into a homogeneous mass. Then add salt, vinegar, olive oil. Turn on the blender again for just a minute. Taste the soup when done, add more salt if necessary.

Pour gazpacho into a deep container, cover with a lid and refrigerate for 3 hours.

After a while, pour the soup into portioned plates, decorate with previously chopped vegetables and serve.
