Gazpacho with shrimps

The original and unpretentious cold soup has an amazing unusual taste. If you want to try something new and diversify the menu, or prepare the first course for a festive table, feel free to take this recipe into service.

Pour oil into a hot skillet and heat. Pour the peeled and defrosted shrimp into it and fry for 3 minutes, stirring. Turn off heat and set aside.

Wash and chop the tomatoes, remove the skin and cut into large pieces. Transfer them to a blender.

Peel the onion, rinse, chop coarsely and place with the tomatoes. Cut the skin off the cucumber, chop it and place in a bowl. Place the peeled cloves of garlic and chunks of pepper with the rest of the ingredients. Twist the whole mass into a puree.

Add tomato juice, vinegar, salt and pepper and stir thoroughly.

Refrigerate the soup for 20 minutes. When serving, place a few shrimp in a plate, pour in cold gazpacho and add a parsley leaf.
