Gazpacho with tomato juice

Gazpacho is a Spanish dish that is especially popular in hot weather for satisfying hunger and thirst. It consists of fresh vegetables with the addition of wine vinegar, olive oil and a large amount of baked garlic. Having tried this dish just once, you will remember this breathtaking taste for a lifetime!

Fry the unpeeled garlic over medium heat in a dry frying pan without oil for 10-15 minutes. It should soften and turn slightly black in several places.

Rinse the red bell pepper and cut into medium-sized cubes. We wash the fresh cucumber, cut it in half and use a teaspoon to clean it from the seeds. Then we cut it into small pieces. We wash the tomatoes, put them in a deep bowl, fill them with boiling water and leave for 2-3 minutes, then pour them over with cold water and remove the skin.

Peel the cooled garlic.

Put the garlic, tomatoes in a food processor and chop them in puree. We shift the resulting mass into a deep container.

Grind the peppers and cucumbers in a food processor so that tiny pieces remain, not mashed. We spread the vegetables to the tomato-garlic mass.

Add spices, wine vinegar, Tabasco sauce and tomato juice to chopped vegetables. We mix all the ingredients well and send them to the refrigerator for cooling.
