Raw gazpacho

Gazpacho is a very common dish among raw foodists. Indeed, for its preparation, only fresh vegetables and fruits are used, ground in a blender.

Wash the tomatoes, make small cross cuts on them, dip them in boiling water for 2-3 minutes. Then peel the vegetables and cut them into quarters.

Wash the cucumbers, peel and cut into several pieces.

Wash the bell pepper, cut in half, peel off partitions and seeds, cut the pulp into several parts.

Peel the garlic. Place vegetables and garlic in a blender bowl, chop the ingredients until smooth.

Pour the vegetable mixture into a saucepan, add olive oil, salt and pepper to taste, squeeze out the juice of half a lemon. If you want a thinner consistency, add the required amount of water. Refrigerate gazpacho for 2-4 hours.
