Loach is a delicious fish with delicate flesh. It is good for its natural taste, so when pickling, you can limit yourself to only salt and black pepper. To preserve juiciness, add also the traditional lemon juice and olive oil. The fish is baked on the grill quite quickly, so we don't go far and do not forget to periodically turn the grill over.

Wash the fish thoroughly, clean it of scales, remove the entrails, head and fins. We cut the carcass into fillets, removing the ridge and thin bones. Place the prepared fillet in a deep bowl.

Sprinkle the fish with salt and black pepper. Drizzle with olive oil. Squeeze the juice from the lemon and water the fish with it. Rub the spices and marinade all over the fillet with our palms. We tighten the dishes with fish with cling film and leave to marinate for forty to fifty minutes.

We prepare a grill with embers. There should be no open flame.

Grease the grill with a small amount of vegetable oil, so that you can easily remove the finished fish later. Place the marinated fish fillets on the wire rack and send them to the grill.

Cook the fish on one side until the fillet on top hardens and becomes lighter.

Then turn over the grate and continue cooking for about ten minutes more. Turn over again and cook for another two or three minutes.
