Pink salmon can be completely defrosted. And in semi-thawed form, clean and cut off the head, tail and fins. Then we cut it into longitudinal strips 1.2-1.5 cm thick.

We divide each strip in half, removing the bones and skin.

We take a deep container, pour water into it and dissolve salt in it. Then we immerse the pink salmon in it so that the pieces are completely under water.
