Harvesting for the winter in the form of hot pepper in tomato juice can be done annually, taking into account the minimum time spent on cooking and a delicious end result in the form of a savory snack. Thanks to this method of pickling, the pepper loses its bitterness and pungency somewhat, which makes this preparation an independent snack.

Rinse the hot pepper thoroughly. There is no need to cut off the tails and peel the seeds from the pepper. The only important point in preparing the pepper is that several punctures should be made at its base with a fork.

We wash the tomatoes, cut out the stalk area and pass the fruits through a meat grinder.

Pour the resulting tomato juice into a saucepan, put on fire and bring to a boil. After 15 minutes, add salt, granulated sugar and vegetable oil to the boiling tomato juice, then spread the hot pepper.

After boiling again, simmer the pepper for 15 minutes, then add chopped parsley and garlic to it. Stir and prepare the snack for another 5 minutes. At the very end, add a preservative to the vegetables - vinegar essence.

Immediately when ready, we lay out the vegetables in pre-sterilized jars and roll up the lids using a special key. Let the workpiece cool completely by turning it upside down and wrapping it in a warm blanket.
