Pea porridge is essentially a well-boiled dry peas of yellow or green color. Fried vegetables, sausage, meat or cracklings are added to it, and this porridge does not need any special spices, because it is delicious on its own. It is prepared simply, only the peas must be soaked for several hours. In this recipe, we cook porridge with smoked sausage and vegetables.

Rinse pre-soaked peas several times with cold water and transfer to a pot for cooking porridge or cauldron. Then fill the peas with water in a 1: 2 ratio and place them on high heat. When the peas boil, remove the froth from the surface and cook them over low heat for 1 hour. Stir the peas periodically with a spoon.

While the peas are cooking, peel and rinse the onion and carrots. Then cut the onion into small cubes, and chop the carrots into a coarse grater. Heat vegetable oil in a skillet and fry chopped carrots and onions in it until light golden brown.

Peel a slice of smoked sausage and cut into small pieces.
