Pea puree soup with smoked sausage

Pea puree soup is becoming an increasingly common dish on the dinner table, and its delicate texture is liked by both adults and children, and smoked sausage gives it a special taste and aroma. Peas for such a soup are soaked for several hours or overnight. There are varieties of peas that do not boil over even with prolonged cooking, in which case we use a blender.

Ingredients

Cooking process

step 1 out of 10
Rinse the presoaked peas several times and boil in a separate saucepan until soft. Do not salt the peas. Sometimes peas cook well in mashed potatoes within 1 hour of cooking, and sometimes not.

If the peas are not soft, puree them with a hand blender or in the bowl of a regular blender.
step 3 out of 10
Peel the potatoes, rinse and, cutting into pieces, put to cook in a separate saucepan.
step 4 out of 10
During this time, peel the onion and carrots, chop them into small pieces of any shape and fry a little in hot vegetable oil.
step 5 out of 10
Then transfer the fried vegetables to a saucepan with boiling potatoes.
step 6 out of 10
Peel a slice of smoked sausage from the shell, cut into thin cubes and transfer to a saucepan with the rest of the ingredients. Boil everything until the potatoes are fully cooked.
step 7 out of 10
Then discard this soup in a colander. Place the thick part in a separate bowl, add a glass of broth and puree with a blender.
step 8 out of 10
Then in the broth in which the potatoes with vegetables and sausage were cooked, transfer the mashed peas and mashed potatoes from the rest of the ingredients, mix and place over low heat.
step 9 out of 10
Then add salt and black pepper to this puree soup to your liking, add laurel leaves and simmer the soup for a few minutes. Let the cooked puree soup steep for 10-15 minutes. Remember that this soup gets thicker as it cools.
step 10 out of 10
Cooked pea puree soup with smoked sausage can be poured into portioned plates and served with croutons or croutons for dinner.
