By adding orange to pear jam, you will prepare an incredibly tasty dessert for the winter table, because orange goes well with many varieties of pears. When cooked properly, the pear slices should remain intact and clear. We do not remove the zest from the orange, which will give the jam a light piquant bitterness. We prepare such a jam by the method of 2-fold cooking.

Then turn off the fire and move the jam for 12 hours to any cool place. After this time, re-cook the jam for another 10 minutes.
