It is believed that the true, classic Georgian adjika does not require boiling. Such raw adjika is prepared easier and faster, and retains all the useful vitamins and microelements of fresh vegetables that would be lost during the heat treatment.

Prepare all products for Georgian adjika.

Wash parsley and cilantro under cold water and dry on a kitchen towel.

Wash the peppers, dry them, remove the stalks and seeds, cut the peppers into pieces.

Peel the garlic.

Dry the walnuts in a dry frying pan.

In a blender or in a meat grinder, grind peppers, garlic, nuts and parsley and cilantro in mashed potatoes. Stir the puree and leave for 1-2 hours at room temperature (do not forget to stir the mass sometimes).

Put the resulting Georgian adjika into a sterilized jar without cooking. Close the jars with a sterilized lid.
