Adjika is a rather spicy and spicy seasoning, which is most often prepared from fleshy tomatoes. Today I propose to cook Georgian adjika from plums, which is perfect for meat dishes and will add a spicy touch to the dish.

Wash plums and hot peppers thoroughly. Cut the plums lengthwise and remove the seeds. Peel the garlic and rinse. Peel hot peppers from seeds and core with partitions. Prepare the jars, wash them thoroughly and sterilize them in the microwave or oven. Boil the lids in a saucepan or pour over boiling water.

Grind the refined ingredients through a meat grinder or chop with a food processor, you can also use a blender. Then put the mixture in a heavy-bottomed saucepan in which you will cook the adjika. Add the required amount of granulated sugar, table salt and tomato sauce. Place the container on medium heat and bring to a boil.

Reduce heat and cook adjika from plums for about 40 minutes, stirring occasionally and skimming off the resulting foam. Remove the container from the heat and carefully place the hot adjika from the plums in sterile jars. Screw on with sterile caps. Turn hot jars of adjika upside down. Wrap in a warm blanket and leave to cool completely for 12 hours.

Then turn the jars over and move them to a cool, dark place for storage. Serve Georgian plum adjika with your favorite dishes. If in doubt about the safety of such adjika, pour a little table vinegar into each jar.
