We clean the goose from fat and cut out the tail. Rub it with salt and pepper on the outside, as well as the tail.

We put the goose in a plastic bag, pour in white wine and tie it up. Shake the bag to soak the whole goose with wine. We send it to the refrigerator to marinate for 10 hours.
