Goose with apples and oranges in foil

A great option for a festive family dinner. The roasted goose looks very appetizing: the golden crust covers the whole carcass and contrasts attractively with the orange circles. To make the skin crispy, we will additionally grease it with a small amount of honey - this will also add a slight sweetness. To make the poultry meat really juicy, it costs a little longer to marinate the carcass before baking, ideally the whole night.

Ingredients

Cooking process

step 1 out of 8
We singe the carcass of the bird to remove the remnants of the feathers, then rinse it thoroughly, cut off the areas with excess fat. Dry the carcass with paper towels.
step 2 out of 8
Sprinkle the goose with salt and black pepper on all sides. Then grease with gruel from garlic passed through a press. Rub the spices into the carcass with our hands from the inside and outside.
step 3 out of 8
We leave the carcass to marinate in the refrigerator, wrapping it with cling film - this way the aroma of garlic will not spread to other products. It is good if the goose is marinated for at least six to seven hours.
step 4 out of 8
After pickling, fill the poultry cavity with apples cut into large pieces. Do not fill the abdomen tightly, otherwise the goose will not be baked. Sew the edges of the abdomen with a thread or chop off with a wooden skewer.
step 5 out of 8
Place the goose upside down in a suitable baking dish.
step 6 out of 8
Cover with foil with the shiny side inward. We put in an oven preheated to 180 degrees. We bake for two and a half - three hours. During this time, open the foil a couple of times and pour the fat released onto the carcass.
step 7 out of 8
Half an hour before readiness, we finally remove the foil. Cut the oranges into thin circles, removing the seeds. Lubricate the surface of the goose with liquid honey and put circles of oranges on it. Return the mold to the oven and continue to bake.
step 8 out of 8
We take out the finished ruddy goose from the oven, let it cool slightly. We cut into portions and serve. Mashed potatoes will serve as an excellent side dish - it is neutral in taste, rich goose meat and aromatic fruit filling are well manifested against its background.

Bon Appetit!
