We offer you a recipe for thick blackberry jam. We will use the forest blackberry, it has a more pronounced aroma. Forest blackberries are smaller than garden blackberries, but more dense, have small seeds, so jam can be made from whole berries without passing them through a sieve and without removing the seeds. We will cook the jam according to the classic jam recipe: from a whole berry without adding water.

We sort out the blackberry from twigs and leaves. Put in a colander and rinse under cool running water. Leave the blackberries for 10-15 minutes to drain the water.

We transfer the berries to a saucepan with a thick bottom and cover with sugar. We leave the berries for 1.5-2 hours so that the blackberries let the juice out and the sugar dissolves a little.

After the sugar has acquired a blackberry color, put the saucepan with berries on low heat and bring to a boil, not forgetting to stir the jam often with a wooden spoon or gently shake the pan to leave the berries intact. After boiling, remove the resulting foam from the jam and cook for 40-45 minutes. Then we remove the jam from the heat and let it cool down.

At this time, we rinse the jam jars with baking soda and rinse well with water. We sterilize the jars using an ordinary kitchen kettle: put a clean jar on the spout of the kettle with boiling water, sterilize the jar for 3-5 minutes. Boil the lids in a saucepan with water for 2-3 minutes.

Put the slightly cooled jam on medium heat, bring to a boil and boil, not forgetting to stir constantly, for 20-25 minutes. Due to the increase in temperature and intensity of the fire, the jam will quickly thicken, after which we remove it from the heat.
