Thick blueberry jam

It is best to use blueberries boiled down to a thick jam as a filling for confectionery. It is this consistency with a minimum amount of liquid that is most suitable for pies, donuts and cakes.

Sort out blueberries from leaves, damaged berries and litter. Wash the berries in plenty of water, put in a sieve so that excess moisture is gone.

Mix sugar and water in a saucepan, put on high heat. Boil the syrup. Dip blueberries in the syrup in the form of mashed potatoes (pre-punch with a blender). Bring to a boil, cook over medium heat, stirring actively and skimming, 45-50 minutes.

Pre-wash the jars in a soda solution along with the lids, then rinse well. Sterilize the glass container over steam, boil the lids for 5 minutes. Pour thick blueberry jam into sterile jars, roll up with a machine. Turn the jars upside down and let cool to room temperature under a warm blanket.
