There are many varieties of khachapuri. A boat-shaped khachapuri is stuffed with cheese and an egg is driven into it at the end of cooking. This pastry turns out to be very satisfying, so khachapuri can be safely used as a full-fledged snack or lunch. Cheese filling, crispy sides, thin crust - that's all about this pastry.

We mix water with milk, heat the liquid to a warm state, then add granulated sugar and dry yeast to them. Stir and leave the mixture for 10 minutes.

After that, drive the egg into the liquid base, add salt and vegetable oil. Mix the ingredients.

Next, you need to sift the wheat flour and add it to the working container.

Knead the dough. It should be tender, soft and elastic. We work with our hands until the dough stops sticking. Then place the dough in a clean container, cover with a towel and leave in a warm place for 60 minutes. After a while, knead the dough with our hands and leave for another 30 minutes. We turn on the oven at 200 degrees.

While the dough is infused, prepare the filling. We rub the Adyghe cheese and suluguni on a coarse grater.

Melt the butter and add it to the grated cheese. We mix everything. Taste the cheese filling. Add a little salt if necessary.

Divide the finished dough into 4 equal parts and roll out thin ovals from them.

Place a small amount of cheese filling on both edges.

Next, we fold the sides with the filling into a tube, bringing them to the center. You will get rollers, inside of which there will be a filling.

The next step is to fasten the edges of the workpiece to make a boat. After that, move the sides a little to the sides and put the cheese filling in the center.

We spread the khachapuri on a baking sheet, previously covered with parchment. We send to bake in a hot oven for about 20 minutes.

We remove almost finished khachapuri from the oven. Using a spoon, you need to slightly break the cheese filling and pour in a raw egg. We put the pastries in the oven for a couple of minutes. The white should set and the yolk should remain liquid.

Put a small piece of butter on the filling of hot baked goods. We serve warm khachapuri to the table.
