Khachapuri on kefir

This is a real delicacy made from tender airy dough with a stretching cheese filling. The surface is baked to a crispy brown crust, which very favorably sets off the semi-liquid filling that melts in the mouth. Knead the dough with kefir, without yeast. This version of khachapuri is prepared quickly and without much hassle.

To prepare the dough, pour the specified amount of kefir into a wide bowl. Add salt, sugar and soda to it. Break one egg and shake the mixture with a whisk until smooth.

Pre-sift the flour to enrich it with air. Add sifted flour to kefir in portions, stirring well with a whisk after adding each portion. As a result, we collect the resulting thick, but soft dough into a ball with our hands. You do not need to knead for a long time.

Wrap the prepared dough in one layer of cling film and put it in the refrigerator. Let the dough cool for fifty minutes.

While the dough is resting, grate both types of cheese on a coarse grater. Set aside two or three tablespoons of grated cheese for sprinkling.

Divide the prepared dough into four parts of the same size. Sprinkle the surface of the table with a small amount of flour and roll out each portion of the dough in the shape of a circle. The circle should be approximately five millimeters thick.

Put grated cheese in the shape of a slide on each circle. Raise the edges of the circle over the filling and pinch it with your fingers.

Turn the resulting "bag" with a pinch down and gently roll it into a cake. It is important to stop in time and not roll too thin. The thickness of the cakes is approximately seven millimeters.

We prick each cake with a fork in random order. Break the egg into a separate small container and beat it with a little salt. Using a silicone brush, grease each cake with an egg mixture - this will give an appetizing golden brown crust of a beautiful color.

Preheat the oven to 200 degrees.

Grease the baking sheet with vegetable oil and carefully place the prepared cakes on it. Sprinkle the surface with a small amount of grated cheese. We put a baking sheet in a hot oven and bake for half an hour.

We take out the finished khachapuri from the oven and serve hot. However, when cooled down, they are also very tasty.
