Khachapuri on kefir in the oven

Khachapuri is a national dish from Georgia. The dough for this dish can be prepared with either yeast or soda. Khachapuri is baked in a pan or in the oven. Various cheese or cottage cheese is used for the filling.

Warm the kefir slightly. Pour about a glass of kefir into a bowl, add granulated sugar and a few tablespoons of wheat flour. Crush the live yeast with your hands. You can add dry ones.

Stir thoroughly until the yeast is completely dissolved, tighten with cling film and leave for 20-25 minutes in a warm place.

Add the remaining kefir and wheat flour to the finished dough, salt and knead the dough. Brush the dough with olive oil, place in a deep container, cover with a towel and let sit well in a warm place for about an hour.

Grate the cheese on a coarse grater, put in a bowl. Break the chicken eggs there.

Knead the dough that comes up and divide into eight parts.

Place the baking sheet in an oven preheated to 180 degrees and bake for about 40 minutes until golden brown.

Remove from the oven and beat in a chicken egg into each boat, after making a small indentation in the center. Sprinkle with black pepper and salt. And bake for another 10 minutes. Serve ready-made khachapuri hot, garnished with finely chopped herbs if desired.
