Adjarian khachapuri on kefir

For big lovers of baking with cheese, I highly recommend cooking Adjarian khachapuri on kefir. The baking texture is airy and light. A great option for a hearty breakfast and a great alternative to the usual scrambled eggs.

Prepare the necessary ingredients for Adjarian khachapuri. Remove kefir from the refrigerator in advance and leave for some time at room temperature. Pour kefir into a deep container, break a chicken egg, pour in vegetable oil and salt. Add baking soda. Mix well.

In several steps, enter the wheat flour previously sifted through a sieve.

Knead the dough well with your hands, adding a little flour if necessary. Roll the resulting dough into a ball and place in a container, previously greased with a small amount of vegetable oil. Tighten with cling film or cover with a damp tea towel and leave at room temperature for about 25-30 minutes.

Divide the dough into 2 equal parts.

In the meantime, prepare the filling. Grate the Adygei cheese on a coarse grater. If necessary, salt and mix thoroughly.

Roll each part of the dough with a rolling pin, giving it an oblong shape. Roll the edges on both sides to the center. Blind the ends well and shape the dough into a boat. Place the boats on a baking sheet at a short distance from each other, lined with baking paper.

Spread the cheese filling evenly into the boats. Place the baking sheet in a preheated oven to 180 degrees. Bake the khachapuri for about 25-30 minutes.

Then, carefully so as not to burn yourself, remove the khachapuri, slightly press down the cheese filling with a tablespoon and make a depression in the center. Gently beat a chicken egg into each boat. Season with salt and pepper.
