Adjarian khachapuri with suluguni

Adjarian khachapuri is a popular dish that has a large number of variations. Khachapuri is a pastry with cheese or curd filling. I want to share one of my favorite Adjarian khachapuri recipes with suluguni.

First of all, prepare the required ingredients for the dough.

Heat milk slightly in a microwave oven or in a water bath, and then add the required amount of salt and granulated sugar, as well as dry yeast. Mix well.

Leave it on for a while for the yeast to start working.

In the meantime, take a deep bowl and use a fine sieve to sift the wheat flour several times to saturate it with oxygen. Make a depression in the center and carefully pour in the matched dough.

Pour in the required amount of vegetable oil. Mix thoroughly.

Knead into a soft elastic dough, adding a little flour if necessary. Roll the resulting dough into a ball and place in a container, previously greased with a small amount of vegetable oil. Tighten with cling film or cover with a clean kitchen towel and leave in a warm place for about 30-40 minutes.

In the meantime, prepare the filling. Peel the Suluguni cheese and grate it on a coarse grater. Beat 2 chicken eggs into the cheese filling and mix well until smooth.

Beat the matched dough a little, and then divide into 5 equal parts.

Roll each part with a rolling pin, giving it an oblong shape.

Roll the edges of the dough to the center.

Connect the opposite ends well and shape the dough into a boat.

Place the boats on a baking sheet lined with baking paper. Spread the cheese filling evenly into the boats. Brush the edges of the pastry with whipped yolk.

Place the baking sheet in a preheated oven to 180 degrees. Bake the khachapuri for about 20-30 minutes.

After the time has elapsed, carefully remove the baking sheet from the khachapuri, slightly press down the cheese filling with a tablespoon and make a depression in the center. Gently beat a chicken egg into each boat. Place the khachapuri in the oven for another 5 minutes.

Serve ready-made khachapuri on the table in portions, put a small piece of butter in each boat.
