By tradition, Georgian khachapuri flatbreads are made from yeast dough mixed with a fermented milk yogurt drink, which is very reminiscent of our yogurt, and fresh or spicy cottage cheese or cheese is used as a filling. However, nothing prevents you from deviating from traditions a little and baking khachapuri with meat filling, so that this dish turns out to be even more satisfying and tasty!

Heat half a glass of milk, add dry yeast, a teaspoon of flour and the same amount of sugar. Then put the dough in a warm place, covering it with a lid so that the yeast ferments and rises. When the dough rises well, pour the flour into the bowl, make a depression in it, pour the dough and vegetable oil, salt and mix everything well.

Add milk in several stages, kneading the elastic and pliable khachapuri dough.

Roll the dough into a ball, cover, let it stand in a warm place for an hour and fit.

For the filling, finely chop the onion, fry it until golden brown. Then grind the pre-boiled and cooled meat in a meat grinder, add it to the onion, add hops-suneli. You can also add a little broth to soften the filling. Salt it to taste. You can also use fried raw minced meat instead of boiled meat.

Knead the dough, and when it fits well, divide into 6-7 pieces. Then roll each part of the dough into a small cake, put a couple of tablespoons of the filling in the center, pinch the edges of the cakes. Roll out some of the cake again.

On a baking sheet lined with baking paper, place the cakes with the seams down, make a small hole in each, brush the khachapuri with egg yolk. Let the cakes bake until tender at 180-200 degrees in the oven, which will take about 20 minutes.
