Khachapuri with cheese on kefir

According to this recipe, the dough for khachapuri is prepared with kefir with the addition of soda. And for filling, a mixture of cheeses and cottage cheese is used - as a result, we have a very delicate, rich filling, which stretches when breaking and just melts in the mouth.

To prepare the dough, break the eggs into a bowl, mix with a fork with salt and soda. Add kefir, mix. Pour in a little flour, kneading the dough. It is important to stop in time so that the dough is soft and pliable, but convenient to work with. The prepared dough should be allowed to “rest” in the refrigerator for one hour.

Rub each type of cheese on a fine grater. Mix grated cheese with cottage cheese by hand until a wet mass is obtained. We roll eight balls from the mass with our hands. Divide the dough into eight parts and roll each part into a flat circle. Place a ball of cheese filling in the center of each circle.

Turn the resulting bag with the pinch down and use a rolling pin to roll it into a flat cake the size of the pan in which the khachapuri will be fried. Heat a small amount of vegetable oil in a frying pan and fry the khachapuri at medium-low temperature on both sides until golden brown. Serve hot.
